De Buyer has been collaborating for years with the ‘Ecole du Grand Chocolat Valrhona’, a leading chocolate expert, to develop a range of perforated tart rings. It is a unique product on the market of pastry utensils thanks to the unique perforations that allow uniform baking of the pastry crust. The straight edge allows for a flawless finish and easy mould release. They are perfect for cooking shortbread, puff or shortcrust pastry.
De Buyer has also partnered with MOF pastry chef Christophe Renou to develop unique shapes of perforated tart rings, proof of de Buyer’s constant drive for innovation.
The perforated tart rings were reviewed by the Association of Pastry Chefs:
